exchange 5.5 master inbox

We have this one account on our exchange 5.5 box which contains every email send in and out of the company and I would like to know how to create or remove it or just remove certain people form it as no one can tell me how or is it a standard account, under the permissions tab there is only the one account?How can you creat simialr smaller inbox containing only afew users.
