Exchange Server – Moving to new machine

I just recently built a new server for our office. We would like to know what the best route would be to transfer our existing mail (which is stored on our server) and settings to our new machine, which we have on the network?? Should we set up a new mail server on the new box or is there an easier way? Any help would be greatly appreciated. Thanks.
