Format function keys in Word 2007

In previous versions of Word I was able to reformat the function keys quite easily using Format and Insert commands. In Word 2007 I can't find any such option. Where should I look or is it no longer possible?

Thank you True Blue. Have one for me. I think it is beyond my capacity to understand/implement the suggestion. What I want to do is use the function keys to represent French accents like e acute (?), ? ,? and so on. Is this possible in a simple way in Word 2007?

try insert>symbols>more symbols

if you can find the letters you are looking for in there click shortcut keys button putting a combo of keys in new shortcut key, then click assign

Forgot to mention when you select Insert, <i>Symbol is at the very right of the Menu bar at the top of the screen</i>
