How do I fix / recreate folder redirection in SBS08 for just one user?

So we had a hardware issue with a switch that prevented one of my employees from accessing the server. I did not notice the lack of network connectivity and assumed this person's account had something wrong based on the error message about the desktop not being available. I spent a while chasing around in the redirected shared folders and SBS Console. Short story, I removed the shared folder for this user in an attempt to recreate it thinking something had become corrupt. The network issues are fixed but now I cannot get the shared folder to recreate in SBS Console. Short of removing all of the shares and starting over, is there any way to get this one user's redirected folders back up and running?
