How to track emails sent via Exchange 2K

Is it possible to run a report either from Exchange 2000 or using a 3rd party product so that I can see all emails sent from someone within the company to any_email_address@a_particular_domain.com. I need to be able to view or print all those emails sent.

My Exchange message tracking is enabled but that only provides me with confirmation of email delivery so this doe snot help.

BFilmFan: Your suggestion is fine if I was going to track any emails sent from the day I enable this option. However, I need to be able to check emails that have already been sent. I am sure there must be a product out there which allows me to interrogate Exchange database and get what I need.
