Massage font converted to a strange font

We use windows server2000 and exchange server 2000 and the user use windows xp and office xp (outlook xp).
When somebody sends a massage to other mail addresses (internet mail or corporate mail) sometime the font of the massage have been convertedto something like Japanese language.
Please how can I solve this problem?
