I already saw a Word 2003 document totally protected against any type of changing…the formating panel was simply disabled…grayed out. I’d like to know how to do that.

File > permission > restrict permission as

Tools > protect document

These are different, but similar. It sounds like the second option is what you are looking for, but check them both to see which better meets your needs.
