migrating emails

I wonder if the title makes justice to my question.

If a company has its emails set up with Microsoft Exchange server with email ids ending as: user1@company.com

Now if, for some reasons, they decide to shift onto a new domain (also say a newcompany name), i want to receive all the mails at the the address user1@newCompany.com

I also want my old mails from the user1@company.com email address. What is the best way to migrate without any glitches?

Why migrate the mail server?
Just have a second MX record created by your ISP.
mail.newCompany.com - a.b.c.d with the same ip address as your existing MX record, being:
mail.company.com - a.b.c.d.

Configure your mail server to receive mail from newCompany.com.
Give all users a new e-mail address, <users>@newCompany.com and set it as the reply address.
Maintain the old addresses <users>@company.com to receive messages to the old address.
Inform the users of their new e-mail address and have them inform their contacts so you can remove the old addresses and the old MX record in a few months.
