MS Access 2007 Time Stamps

I am developing a database for which I would like Access to store 2 independent time-stamps:

1) On record creation, never changes.
2) On record update with a link to another field that stores the reason for the update.

I would like my time stamps to be in the format dd/mm/yyyy, HH:mm if at all possible.

Any guidance would be appreciated.
