Printing to a file organized by date

We are currently trying to begin going paperless in our company, but we need a way to foolproof printing of our nightly reports to a file.
Does anyone know of a product or driver that would let a windows computer print to a file that is dynamically created by date with further printing appended to the file for that date. I would prefer PDF but Word documents are fine also.
