Retrieve mail from a deleted user

I have recently installed SBS 2003 at this small business. Up ?til now, the network was peer-to-peer connected to the Internet through a DSL router and sending / receiving mail through a POP3 account at our ISP. The business wanted to put the engineering dept. (myself and 4 others) on a server for central file storage, backup, and e-mail retrieval / virus scanning / and storage. So now, engineering is on the server (server.domain_name.local) while the rest of the company is not.

My problem: After setting us up with user accounts and mailboxes and configuring Outlook to point to Exchange I found that we could send mail to others outside the company and receive mail from virtually anyone but could NOT send mail to anyone in our company not on the domain. In an effort to resolve this I created users (and POP3 connectors) for the others in our company unknowingly creating a situation where their mail was downloaded to the Exchange server for ~18 hours. When I saw this I panicked and deleted the users in Active Directory and the POP3 connectors. The users are back to receiving their mail from the ISP and all is well except for the messages still on the server.

Now, how do I retrieve this mail so I can forward them to their rightful owners?
