Security copy of roaming profiles

On a Windows 2000 domain there are more than 500 users with roaming profiles.
I’m the Administrator, and I want to make a security copy of the data on every profile (My documents, …)
I have a CD burner for this purpose.
What program/utilitie doyou advise for this?
