Separate E2K from W2K DC

Hello everybody,
in the next few weeks I am planning to work on some project for the company I work with and I`l like to get all information I need to avoid any “unforgiven” mistakes.
Right now my company (only 30 people) has the exchange 2K installed in a domain controller server of a W2K domain. This server is running out of space so I am thinking to add a new server with exchange installed, join the domain and move all the mail-boxes from the DC server. Once I am sure that everything is working fine, can I just remove the exchange from the DC server? What do I need to make sure before I uninstall it??
