Microsoft's site is definitely loaded with info but is also very "meaty". If you want more straight to the point and screen captures of how to install exchange go to this site

I am currently doing much the same. We currently have an Exchange 2000 server, but we want to upgrade to Exchange 2003 on a new server running Server 2003. I found that there are many places to find good information. Microsoft's site is full of usefull information. The best resource I have found thus far is this article: Hope this helps.
