SharePoint/Microsoft Infopath

I have designed an Microsoft infopath form. This will collate informaiton from individual users re hours/days. This form is held in SharePoint. The form is submitted for approval by email. The approver selectes approval/rejection option and sends back to requestor.

Question: I would really appreciate it if someone could tell me how the information collated could be automatically linked to say an excel database to show these details. And preferably put in such a way that it would automatically calculate. For a simple example if one person takes five days holiday, has an allocation of 10 days in total leaving 5 days. Thank you so much
