There may be different apps but all of these operate on the same process/principles and I really want to know what they choose one payment app over another.

You want to accept a payment from me (done by smartphone or tablet, with my banking or creditcard app, of Google or Apple Pay or Paypal app or whatever) on your bank or creditcard or Paypal or Google account or whatever? Then ask your bank or creditcard what tools they recommend.

How do you currently accept payment with credit card or debit card? And that solution doesn’t work for payments with an app?

Square and PayPal are solid, but apps like Stripe offer great flexibility for business owners. It all depends on your needs! What kind of features are you looking for in a payment app?
