Ther are many flavors of unix. What unix are you using and for what application?

You can do a search on the net for "Unix Administration" or add in the specifics... "HPUX Administration" (HP Unix, Solairs, ... etc.)

http://www.divms.uiowa.edu/csg/sysadmin/unix.html

The version of the OS used is very important too.

All of the information you are requesting is available at the IBM sites. For a starters in reading material I would suggest the book 'Z/Architecture Principles of Operation' located at http://publibz.boulder.ibm.com/epubs/pdf/dz9zr001.pdf
Just about all of the manuals for the mainframes are available at IBM in PDF formats for online/offline reading.
Currently there are two highlevel flavors of the OS for the mainframes: OS/390 and Z/OS.
As for hardware, Hitachi Datasystems dropped out ofthe mainframe arena but IBM and Fujitsu (formerly Amdahl) still produce mainframe servers.
Programming languages used on mainframes are many and varied based on the site. A short listing of them includes Assembler, COBOL, FORTRAN, BASIC, PL/1, PASCAL, C/C++, JAVA, DB2, SQL, ORACLE, NATURAL, REXX,...

Hope this gives you a good start.

The degree of dificulty in learning about mainframes is the same as that of learning about PC's and Intel based servers.
