In regards to the first question, I think the best reference currently available is the Windows2000 Server Resource Kit.

As far as the Exchange migration, I think the best resource is TechNet (www.microsoft.com/technet). If you search on Exchange and Microsoft Mail, you’ll come up with several articles and white papers on doing this migration.
