writing code to process email

I would like to write an application (any language) to process the contents of pop3 email (preferably from a folder in the client, or directly from the pop3 server if necessary). I subscribe to mailings, and want to automate stripping off the fluff that surrounds the contents.

Any ideas how to do this?
