A RAID 0 Configuration with three drives

I’m on the verge of upgrading my workstation (Precision 340 to, probably, Precision T3400 unless I learn something to the contrary here). As part of this I’ve been doing my homework on RAID, but I haven’t seen anything along the lines of what I’d like to do, which makes me wonder whether it’s possible or advisable.

I would like to configure the new workstation with three 320GB SATA 300 drives. The first would be partitioned 50%/50% for operating system (Win XP, most likely) and programs, respectively. I then would like to use drives two and three as a RAID 1 mirrored array for data.

My thinking is that I would have constant and automatic data redundancy. In addition, I backup to a TB NAS device with RAID 5 and plan to implement a rotating portable HD plan for off-site storage.

Every discussion I’ve found on configuring a RAID array talks about incorporating all of the drives into the array. Is it possible to have a boot drive that is not part of the array and so achieve what I’ve described?
