Let say that I've installed windows server 2003 and I would like to know about any suitable security feature which helps me to have a log and who is accessing my server.

Yeah, it's called the Event Log...

Local Security Policy, Local Policies, Audit Policy.

You can use Event viewer

You can find at- Control panel-> Administrative tools-> Event viewer -> Security.

The Security logs are turned off by default. To turn it on jus ask in Windows Help & support Center. It will give instructions on how to activate security logging
