I have around 350 current users. We are going to stop using "generic" logins which we currently use in some of our medical team rooms. Each individual will need a login to the domain and email. That's 80+ for some team rooms on 3 different computers. Can anyone give me advice on which is the best way to accomplish this w/o the need to setup 80+ users on the local machine...

I have my users in the Domain Users group and then you can add Domain Users to the local Power User group. As long as you don't have users restricted in the Deny logon local through policy then they should be able to log on locally.
You could also use roaming profiles with their My Document folder redirected to a server to avoid killing your bandwidth on log on.
