I know that the ARCSERVE backup software will has a version that will backup and resotre Exchange servers. I have never used it, but know others that have and they say it is good. I have used Arcserve in generla backups and its a good prouduct -a little difficutl to get used to but once you know it it's very reliable.

I know its not cheap, but you get what you pay for.

I am sure most other good backup software will also backup an excahnge server

The only thing that you need to backup to another hard drive for safe keeping (say, before applying some new patch) are the priv.edb and pub.edb files found in the mdbdata folder. You'll need to stop the services first. The shutdown order is IMS, MTA, Event Viewer, Info Store, Directory Store, & System Attendant. This backup is only really secure if you make a note of all the global settings of your Exchange Server. If it needs to be rebuilt from scratch, copying the two .edb files back to the mdbdata folder will only work if the new Exchange install is configured exactly the same as the old one. You might also want to make sure your transaction logs are stored on a separate drive. They serve a backup function as well and should be kept somewhere safe.

Both BackupExec and ARCServe will back up the Directory and Info Stores while the services are online, but not to a hard disk...atleast not that I'm aware.
