Can cat-6 cabling be pulled for individual workstations running a 10/100 nic for future upgradability? If so will the signal strength be degraded at all?

You will see no problems running CAT6 cable for CAT5 usage.

You should see slightly better performance with less bad packets.

The primary difference between CAT6 cable and CAT5 is that CAT6 isolates the 4 sets of twisted pairs from each other.

CAT 6 is backward compatible ..and works at 200 Mhz app. where CAT 5 ro CAT 5e at 100Mhz and CAT 6 can be well deployed for 100/1000 Mbps Network.
Remember the connectors are different for CAT6.
