Change destination path of email?

Is it possible to change the route of an email. An employee has left but rather than closing her email account I'd like the mail routed to an existing address

Im running server 2000 using outlook as my client

Any help would be great!

Personally

I used to (don't admin Exchange any more) remove the SMTP address from the departed employee's account, and add that SMTP address to the user whom you wish to receive the departed employee's Email, as a secondary.
You would do this using AD Users and Computers.
