Windows SBS 2000 - can I change the OS disk to Dynamic from Basic without problems? I mean, will my server still boot? Thanks!

no. once you changed to dynamic disk, your stuck with it. Changing to basic you'll lose everything on the dynamic made disks.

Windows will also not allow you to change the system drive to dymanic once you've install the server O/S on it. if you want mirrored drives or striped for the system best bet is to use hardware RAID.

If you have RAID or extended partitions on the drive, I would not change your disk. You will loose Data. Possibly all data.

Even without Raid on your drive the procedure can be a tricky.
