Create ghost image of system and installed programs only?

Hi guys, I need to create a ghost image of a machine that only includes the operating system and installed programs. My problem is the computer in question also has a very large quantity of data on it and we obviously don’t want a 300GB ghost image. Is there a way around this problem?
