Creating a Mailing List

I’m creating a mailing list for different projects, I work in th commodity business and i would like for someone to run me thru a way of making a customized mailing lists. i would like to use a pre-done one but i wanted to add a tab that read ‘Sattus/Activity’ column. Would I be able to do with Wizard? All the help is so much appreciated.
