What does the term 'Demon' mean with reference to a communication network connecting a Unix machine with an MVS mainframe running IMS?

Demon simply means process, the equivalent of a service in the NT/Windows 2000 world.

For example there may be a mail demon on your Unix box that any application which wanted to send mail to would call.

Putting it correctly, the "demon" referred is actually spelled "daemon", in the unix world it is a process or service running in the background performing tasks without the need for human supervision/intervention.
