Email Reroute to A Differt Server

I have email coming in via Microsoft Exchange Server 2000 at another location. The person who set it up is not on site often, and has blocked out many options on the network for all of our Outlook 2000 copies to have many functions disabled. Been like this for years when the original person quit.

I am wondering how I can get all of this email forwarded to a Gmail account so my Thunderbird can download it, and I can use its settings. For example, one of the settings blocked on the MSE is that I can not disable sending out read receipts. For security reasons, this is not allowed but he has not changed it so we can disable it. Of course, his is disabled. So, using this example, I want to be able to change the forwarding of all this mail to a Gmail account I will create, so it gets downed into my local TB and I can use its settings to keep certain privacy and security messages, compatible to Outlook, available to me.

Can I do this on my own with the limited access to the local Outlook email I have, or is it all server related?
