when I log in to a remote mail server, are my user/password credentials secure? Or are these sent as clear text?

This would depend on what type of mail server is used. Also, do you get the "Padlock" when logging into your server? That is a good way to tell if you are at least at a secure site. Most email servers use encryption of one type or another toauthenticate a user, that is why you may see your password as "****" when you log in. The best way to find out if yours uses clear text or encrypted is to ask your provider.
