Excel NTFS Delete Permissions

Hundreds of other queries have been posted about Excel97 and 2000 permissions needing delete to be able to update files. I am seeking information on Excel/Office 2002 and 2003 as to whether or not you can set NTFS permissions to deny delete, yet still allow change on Excel files.
