1. Open Exchange System Manager,
2. Expand "Administrative Groups" (if you have this, if not step 3.)
3. Expand Domain Name
4. Expand "Servers"
5. Expand Server Name
6. Expand Protocols
7. Expand SMTP
8. Right-Click "Default SMTP Servers"
9. Click on "messages"
10. Enter a valid e-mail address into "Send copy of Non-Delivery Report To:" field

This will send a 'report' of all non-deliverable messages (typo's) to the specified address. The original message will be attached to the 'report'
ALSO, the original sender will get a non-delivered message back to them stating that the e-mail address they sent to was invalid.
Exchange does not have a true "catch-all" account that mail gets directly re-directed to. I have setup a "catch-all" account in Exchange using Visual Basic scripts; take a look at Microsoft Article Q324021
This will explain how to setup a "catch-all" mailbox sink for Exchange 2000.
