When our MS Exchange server reboots, the Information Store service doesn't start automatically, but can be started manually after the server finishes booting. This behavior only started recently after performing some Microsoft updates. I don't see any error messages in the Event Log. Any ideas?

I checked that already, and it is set to automatic as per its default. I also set the properties of the service to restart it should it fail. I want to know why it's failing in the first place.
It could be that the account credentils used to start the service automaticaly, no longer have rights to do so before the server is loaded.
Maybe one of the updates fixed an expliot in the service and it no longer runs automaticaly. Try checking the KB articales on the updates you applied that are related to the Information Store Service.
