For generating a comprehensive reports for exchange server usage in regards emails sent and received message by a specific user on time basis, I would suggest you to go for a third party application like this exchange server reporter(http://www.lepide.com/exchange-reporter/) tool to accomplish this task. It's allow to administrator to scheduled exchange server scanning and helps to track the Exchange Servers in an organization and generates reports including the Mailbox Folder reports. The reports are generated in graphical and tabular format that can be exported in HTML, DOC, CSV, PDF, MHT and RTF format.
