Forwarding email to internet

I have a user who left the company and wants his corpoarte e-mail forwarded to his new internet email address. I have exchange 2000 on a windows 2000 network. i have had suggestions about adding a rules and about making him a contact. Neither expalined how to do this or how having him as a contact get his email to the internet. Please be specific.
