How do I install XP and Vista on different hard drives and dual boot?

I am currently thinking about building a new computer and I would like to use a new SATA hard drive with Vista installed and also have my IDE hard drive with XP installed from my old computer hooked up so that I can dual boot. How would I go about this? I understand I would have to set up one of them as the priority in the bios, is that how I would switch between operating systems? Would I be able to access data on my XP hard drive while I was in Vista?
