Are all 8 printers shared from a Windows machine, so users connect to a printer on a Windows server and NOT to the printers directly?
If so (and typically this is how you do it; you connect your print server to the printers and share out the printers on the print server, and it's these shared printers that users connect to) then you can just check the Event Viewer logs on the print server. In the System Log, look for Event ID 10, as that will list the print job information. You'll get user, printer used, document printed, # of pages, etc.
From here, you can use a tool like Event Log View from Engagent (it is on the Windows 2000 Resource Kit CD) to parse the System Log records.
That's what I do.

As long as they are all HP why not use HP's WebJetAdmin( http://www.hp.com/sbso/tpm/web_jetadmin.html ). It will let you do everything from your desk!
