How do I populate a custom field in outlook inbox ?

I am trying to keep track of which emails I have forwarded to whom.

My plan was to add columns in Outlook w the initials for the three people I send emails to. I right clicked on the grey bar above the emails, picked "field chooser" then "new". I called a field "P", type was "yes/no" and format "icon".

Now I am trying to put a check mark (or something) into this column. I called our IT services but they gave up after a day.
