.ico files are simply icon graphic files.

what your co-worker did was change the program associations to the file extensions (the icons on the files change according to what program is currently associated with it)

you can usually undo it by re-associating the affected files.

perhaps the easiest way is to open explorer, highlight one of the files in question, while holding down shift, right click on the the highlighted file and choose Open With...

Then choose the program and check the box to always open with this program.

One of the easiest ways to re-associate an extension is to type WINFILE in the run box. That will bring up the File Manager from back in the Windows 3.1 days. Click on File, then Associate. In the Files with Extension field, type the 3 digit extension that you want to change (XLS, DOC, MP3) and then click on the Change Type button. Browse to the executable that you want to be associated with extension, and your done.
