How do you document your network environment?

How do you document your network environment?
Many small/mid size companies are dependent on their IT managers/consultants, if they leave there's often no knowledge transfer or documentation on the environment.

How do you document your network environment (desktops, laptops, servers, server functions , locations, system info [software, hardware, patches] backup schedules, install and warranty dates, changes to the system, network topology ....

This is my question How or even where to start

I was just given the task of 30 days to document the whole network which includes plans ot bring on 2 child domains in both South America and Europe.

But I don't know where to start, I believe I have been setup to fail and I dont want to give no one the pleasure.

Please Help!
