How to a save to a folder not presented in the list?

I use Word on an Imac. I do a lot of different projects during the day. It's frustrating not being able to save a document to the exact right folder when it is not presented in the drop down list of available places to save the document. I can save to "Documents" but then later I have to open Finder and move my document to the right folder and subfolder. Is there a way to do this when I am saving my document?
