How to Remove a Exchange Site

I have two exchange servers 5.5 GDH1 and TAM1

GDH1 has the MS Mail Connector configured to TAM1.

I am taking TAM1 offline for good and have moved all mail boxs to GDH1.

What do I need to server the link correctly between GDH1 and TAM1.

I have had TAM1 of line for a while and since then the Information Store Service on GDH1 keeps stoping all the time.

Can anyone tell me how to correctly Remove TAM1 from the site.
