I have two 6 display GPUs and my Windows 10 computer does see all 12 monitors in the display settings program, but it will not allow me to enable more than 7 at a time. How do I fix this?

Are you certain the video cards have sufficient RAM installed ? If not, see if you can add more or consider new, more powerful video cards. Just because Windows 10 sees that many displays, doesn't mean it can always support them without the required hardware. Check with the video card manufacturer, could be as simple as an software upgrade if you are lucky.

I don't see a lot of detail here.

But hey, watch https://www.youtube.com/watch?v=Toft6fMvByA&feature=youtu.be and see how cables nearly sank the project.

You also have to ask the video card maker if they have such limits as well.
