Nt server affords you a couple of possibilities: 1. Performance monitor charts or logs objects such as processor/server/system/threads/disks (by typing diskperf -y at the command prompt), etc. You can also import data to an app. such as excel for reports. There is also network monitor (controlpanel|networking|services)which will provide detailed activity of the network (frame level)and SMS has even more robust features for network monitor. Create a network baseline (high and low activity periods over several days) so you can measure accurately your network's performance.

You should get a sniffer to get some data about your network and validate via a modeling software.

Try sniffer from Network Associates and NetRule from Analytical Engines, Inc. Both give out trial software.

Depends on what you want to watch, but what I've done is to set up batch files to copy large files and large directories from workstation to workstation, and workstation to server. (We are a school, so $ is an issue here but I have used Network Associates Sniffer Pro which can diagnose and give symptoms.) Then use performance monitor to watch.
