Macs: Network Security

I have Macs in my environment that are not part of the domain but
they access resources. Since you have to turn off "Digital signing..."
on the servers for Macs to connect, does this mean that their
passwords are being sent to the servers in clear text too?

any documentation with the answer would be great!

Turning off digital signing does not enable the server to accept clear-text passwords. You have to specifically configure the Windows server to
accept clear-text passwords.

Digital signing provides mutual authentication to prevent man-in-the-middle attacks.
