If I have multiple internet email accounts, how do I identify which ‘from’ address to use when ‘sending’ email.

First you must be using Outlook with the Internet Mail Only (IMO) configuration. It won’t work if you are using exchange server. You can reconfigure your mail support by selecting Tools * Options from the menu then on the Mail Services tab click the Reconfigure Mail Support button.
After this is conplete when you compose a message choose View * Options and select Send Message using box to specify the sending account. You can also used the drop down arrow next to the Send button.
