Why would you want to hide My Documents??
Right click the folder, click on properties and tick Hidden in the attributes section. Apply and OK.
To show it again go to tools\folder options\view and tick Show hidden files and folders in the scroll down menu.
Now your folder will be visible and you can untick the hidden attribute to restore the default.
Dont forget to hide the hidden files and folders afterwards

I would think that you can rename it or change the path in the registry. The problem is that it is a special windows folder and if you hide it (like the above) all you will do is hide anything you put into it. Don't forget, often YOU dont put stuff there, it is the default location for many things. My suggestion would be just to remove it from the desktop. In XP
right click an open area of the desktop
select properties
Select Desktop
Select Customize Desktop
Uncheck My documents
