How do you deal with learning disabilities when training people?

This is not an easy answer for this crowd for two reasons:
(1) we seldom encounter the mentally disabled in our typical classroom and
(2) how you might deal with a learning disability is determined by the disability itself. I suggest talking to a professional teacher for the learning disabled, then adapt their tools and techniques into your curriculum.

With Respect. Take the time to treat them as normal, with feelings and especially interests.
Put yourself in their position.
Deal with the specific problem. If its Dyslexia, then joke that you are not a great speller either. If its sight, make sure they sit at the front. Also remember that if they have disabilities in one area, they maybe brilliant in another, e.g. Blind, hearing is brilliant, dyslexic, brilliant at maths.

In high school, I was assigned to teach computing to a group of twelve or so LD students. We were given old equipment, so that if a problem occurred, that we would not destroy more valuable computing resources.

This group of kids may or may not match what you have ahead of you. The bulk of them had other issues, so that in and of themselves their actual disabilities were not the main challenge. The difficulty lay in the behavioral problems associated with their other conditions.

Just like folks without disabilities, each of them learned in different ways. Overall, they tended to feel more confident when repeating tasks. Also, the group tended to respond well to positive reinforcement. Just being nice gets you miles along on some days.

Constantly question your own assumptions about the way you view the GUI and/or the app. Just because you think of "My Computer" as the icon in the upper left, doesn't mean that they necessarily view it the same way.

I would access the students disabilities and use that accessment to prepare a curricullum that would fit the student at best and lobby for help from students that would be able to help.Focus on what they can learn and what it would take to get thosethat need extra help in a volunteer training session beyond the initial training that they would be receiving and most of all provide the encouragement and creativity that would make the training interesting.Good Luck
