Need wisdom\help on Split\rename of Win 2008 R2 Domain w/Exch 2003

I recently started working at a new company and they are in the processes of renaming their domain. I am having difficulty finding "simple" step-by-step or best practices.

Here are the details:
-Windows Server 2008 R2 w/4 AD servers plus additional servers (ie. file, print, etc.)
-Exchange 2003 (rename is prep for upgrade to 2010)
- approx. 300+ client computers running XP, Vista, & 7
- plus a plethora of android and apple smart phones as well as ipads.
- approx. 40 remote users
- 3 locations\sites
-Currently using domainname.com for both internet presence and intranet.
-Company would like to split domain to be intranet domainname.local or .lan and internet\exchOWA keep domainname.com.

Last time I did a rename it was from NT4 to 2000 (so I am feeling seriously behind the curve). Does anyone have a simple checklist and\or how to's for the server-side, exchange and client requirements. I have the docs from microsoft but not feeling uber confident after reading them.
